janchi guksu

잔치국수 - 김 까먹었당!

Ingredients
somen noodles
cooking oil
toppings:
1/3 cup julienned cucumber
1/3 cup julienned carrots
1/3 cup chopped kimchi (season with 1 teaspoon of sugar, sesame seed oil, and pinch of toasted sesame seeds)
2 eggs (cook the egg whites and yolks separately and cut into to fine strips, 지단 'jidan')
1/4 cup minced beef (marinate with soy sauce, garlic, sugar, pepper, and sasame seed oil)
geem (toasted seaweed)
broth:
10 dried anchovies
1 small sheet of kelp
1/2 onion 10 peppercorns
2 tablespoons guk gahnjang (soy sauce for soup stock)
6-7 cups of water

Directions
1. Heat a little cooking oil in a small non-stick pan. Sautee the carrots and cucumber, separately. Set aside.
2. Cook the marinated minced beef in the same pan. Set aside.
3. Bring a medium pot of water to a boil. Add the somen noodles and cook for 4-5 minutes. Drain in a colander then immediately rinse in cold running water. Drain well.
4. Using the same medium pot, boil 6-7 cups of water. When it starts to boil, add the achovies, kelp, peppercorn, and onion. Take the kelp out after 5 minutes. Continue to cook for another 15 minutes over medium heat.
5. To serve, place the cooked somen noodles in a bowl. Pour the broth (2 cups) into the bowl through a fine strainer.
6. Add your toppings!

jjol myun

쫄면 - 진짜로 매웠다 ㅜ_ㅜ

serves 1

Ingredients
jjol myun
toppings:1/2 cup cooked bean sprouts
1/2 cup julienned cucumber
1/2 cup julienned carrots
1/2 cup julienned purple cabbage
1/2 hard boiled egg
sauce:
2 tablespoons gochujang
2 tablespoons gochugaru
2 tablespoons vinegar
1 tablespoon sugar
1/2 teaspoon minced garlic
1 tablespoon lemon juice
2 tablespoons sprite
1 teaspoon toasted sesame seeds
1/2 teaspoon wasabi
1/2 teaspoon sesame seed oil

Directions
1. Julienne carrots, cucumber, and purple cabbage using a mandolin.
2. Cook jjolmyun nooles in boling water 8 minutes until tender. Rinse with cold water and set aside to drain.
3. For the sauce, combine all ingredients listed above in a bowl.
4. Place the noodles in a bowl and add the toppings and sauce.

giada's spinach salad

NYE dinner w/ Cinders and Darrell
IngredientsParmesan Frico:
1 1/2 cups grated Parmesan

Citrus Vinaigrette:
1/4 cup extra-virgin olive oil
1 tablespoon lemon juice
1 tablespoon orange juice
1/2 teaspoon lemon zest
1/2 teaspoon orange zest
1 teaspoon honey
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Spinach Salad:
6 ounces baby spinach leaves (about 6 cups)
1 orange, cut into segments
1/3 cup sliced almonds, toasted
1/2 red onion, thinly sliced


DirectionsParmesan Frico: Preheat the oven to 375 degrees
F. Place
a silpat mat on a baking sheet. Place 6 (1/4-cup) mounds of Parmesan cheese on the mat and gently tap down until each mound is flat and 4 1/2 to 5 inches in diameter. Bake for 8 to 10 minutes, until golden and bubbly. Let cool until firm, about 5 minutes. Continue with the remaining Parmesan cheese.
Citrus Vinaigrette: Combine all the ingredients in a jar or a tight-sealing plastic container. Shake to blend.
Spinach Salad: In a large bowl, combine all the ingredients. Drizzle with vinaigrette and toss to combine. Divide the salad and serve with (1 or 2) parmesan frico.
* added pepper to parm frico/ sliced almonds were a bit pricey so I used whole almonds ($1.50/bag) instead.

shrimp lasagna rolls

Giada's recipe

Ingredients
1 lb lasagna noodles
3 tablespoons olive oil
1 pound large shrimp, peeled and deveined
Salt and freshly ground black pepper
3 cloves garlic, chopped
2 (15 oz) containers whole-milk ricotta
1/2 cup freshly grated Parmesan cheese
2 eggs, lightly beaten
1/4 cup chopped fresh basil
1/4 teaspoon freshly grated nutmeg
3 cups marinara sauce, store-bought or homemade (i used Pomi marinara sauce)
1 1/2 cups grated mozzarella cheese

Directions
Preheat the oven to 350.
Bring a large pot of salted water to boil over high heat. Add the pasta and partially cook until tender but still firm to the bite, about 6-8 minutes. Drain.
Meanwhile, heat the oil in a large skillet over medium heat. Season the shrimp with salt and pepper. Add the shrimp and garlic to the pan and saute until shrimp are cooked, about 4 minutes, stirring often. Remove from heat and let cool. Coarsely chop the cooled shrimp and place in a bowl with 2 cups ricotta cheese, the Parmesan cheese, eggs, basil, 3/4 teaspoon salt, 1/4 teaspoon pepper, and the nutmeg. Stir to combine.
In another bowl, combine the marinara sauce with remaining 1 cup ricotta and stir to combine.
To make lasagna, cover the bottom of a 9 x 13" baking dish with 1 cup marinara mixture. Lay 4 noodles flat on a dry work surface. Spread about 1/4 cup shrimp mixture evenly over each noodle. Roll up and place seam-side down in the baking dish. Repeat twice more to make 12 lasagna rolls.
Drizzle the rolls with the remaining marinara mixture (i used plain marinara sauce to keep the sauce looking red) and top with mozzarella. Bake until lasagna rolls are heated through and cheese begins to brown, about 25 minutes.

broccoli w/ miso dressing

Ingredients
5 cups cooked broccoli florets, 2 tablespoons miso, 1/2 tablespoon sesame seed oil, 1/2 tablespoon minced garlic, toasted sesame seeds

Directions
1. Combine miso, sesame seed oil, and garlic.
2. Add dressing to the broccoli florets and toss to mix well.
3. Sprinkle toasted sesame seeds before serving.

kimchi fried rice with spam!

김치 볶음밥 - 나는 스팸을...

serves 2

Ingredients
1/2 cup diced spam
1/2 cup chopped kimchi
1 cup cold (or room temp) rice
1/3 cup diced onion
1/4 cup diced zucchini
2 eggs
1/2 teaspoon sesame seed oil
1 teaspoon cooking oil

Directions
1. Heat a heavy-bottomed nonstick pan over high heat. When hot add 1 teaspoon of the oil.
2. Add the diced spam and onion. Cook until spam dices turn slightly brown and onions turn translucent.
3. Add kimchi, zucchini, rice, and sesame seed oil to the pan.
4. Use a spoon to break up any rice clumps.
5. Season with salt (if necessary) and pepper and stir-fry the rice to coat evenly with oil.
6. Stop stirring, and then let the rice cook undisturbed until its gets slightly crispy, about 1 minute.
7. Stir the rice again, breaking up any new clumps.
8. Serve with a fried egg on top!
