Poached Egg
Veggie Curry with Poached Egg
Recipe from Elton Brown
Always use fresh eggs. Deliver the eggs to the pan with a custard cup or large spoon. Avoid cracking directly into the pan. When using a non-stick skillet cook in no more than an inch of water. If you don't have a non-stick pan, poach in a deep saucepan containing at least 3 inches of water. Always acidulate the poaching liquid with either vinegar or lemon juice (1 tsp per each cup of water). Bring liquid to a boil, add eggs, then remove from heat and cover. Cook for 5 minutes. Always remove eggs with a slotted spoon. Poached eggs can be refrigerated in ice water for up to 8 hours, then reheated in hot water. Do not re-boil.

Steamed Eggs (계란찜)
Total wanna be chawanmushi. :-)
Super simple recipe: 1 tablespoon of Kikkoman Hon Tsuyu (soup base) + 1/4 cup of water. Bring it to a boil. Add 2 eggs. Turn off the heat immediately. Stir with chopsticks. Cover with a lid so the steam cooks the egg mixture. Let it sit for about a minute or so. Top it w/ spicy cod roe.

Fried Egg Over Rice (계란 밥)
Ingredients
1 bowl of rice
1 egg, cooked over easy
1 teaspoon soy sauce
1/2 teaspoon sesame oil
1 teaspoon furikake
Directions
Combine all ingredients in a small bowl. Mix well.

Bell Pepper Egg-In-A-Hole
Recipe adapted from Martha Stewart
Serves 2
Ingredients
1 teaspoon olive oil
1/2 bell pepper, cut into two 1/2 inch-thick rings
2 large eggs
salt & pepper
2 slices of whole wheat english muffin, toasted
Directions
In a medium cast-iron or nonstick skillet, heat 1/2 teaspoon oil over medium-high. Add bell pepper, then crack 1 egg into the middle of each pepper ring. Season with salt and pepper and cook until egg whites are mostly set but yolks are still runny, 2 to 3 minutes. Gently flip and cook 1 minute more for over easy. Place each egg on a slice of english muffin. Sprinkle grated parm cheese before serving (optional).

Oyakodon
Ingredients
3 oz chicken breast
1 egg
1 green onion
1/2 small onion
sauce - combine and boil 1/2 cup of dashi stock, 1 tablespoon soy sauce, 1 tablespoon sugar, and 1 tablespoon mirin
Directions
1) Slice chicken, green onion, and onion thinly on an angle.
2) Bring sauce to a boil.
3) Add chicken, green onion, and onions. Cook for 5 minutes over a medium heat.
4) Distribute the beaten egg over. Cook for another minute.
5) Serve over rice.
