mac & cheese

uber cheesy v-day dinner - barefoot contessa's recipe

serves 4

Ingredients
Kosher salt
Vegetable oil
1/2 pound elbow macaroni or cellentani
1/2 quart milk
4 tablespoons (1 stick) unsalted butter, divided
1/4 cup all-purpose flour
6 ounces Gruyere, grated (4 cups)
4 ounces extra-sharp Cheddar, grated (2 cups)
1/4 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
4 slow-roasted tomato slices (roast tomato slices w/ fresh thyme leaves @ 400 degrees for 20 minutes.)
1 1/2 cups fresh white bread crumbs / Japanese Panko

Directions1. Preheat the oven to 375 degrees F.
2. Drizzle oil into a large pot of boiling salted water. Add the macaroni and cook according to the directions on the package, 6 to 8 minutes. Drain well.
3. Heat the milk in a small saucepan, but don't boil it. Melt 3 tablespoons of butter in a large (4-quart) pot and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. While whisking, add the hot milk and cook for a minute or two more, until thickened and smooth. Off the heat, add the Gruyere, Cheddar, 1/2 tablespoon salt, pepper, and nutmeg. Add the cooked macaroni and stir well. Pour into a 1 1/2-quart baking dish or 4 individual baking dishes.
4. Arrange the slow-roasted tomatoes on top.
5. Melt the remaining 1 tablespoons of butter, combine them with the fresh bread crumbs, and sprinkle on the top. Bake for 25 to 30 minutes, or until the sauce is bubbly and the macaroni is browned on the top.

pickled peppers

고추장아찌- 한달만 기다려!

Ingredients
6-7 green korean peppers
2-3 red korean peppers
3 jalapeno peppers
1 cup of boiled vinegar
1 1/2-2 cups soy sauce
1 small jar

Directions
1. Add all ingredients into the jar.
2. Keep it in the fridge for about a month before serving - ugh.

japanese curry


카레라이스 - 완전 중독. 어제도 친구랑 curry house에서 점심.

serves 3

Ingredients
1/2 box House Vermont Curry Sauce mix (3 curry blocks)
1 large chicken breast
1/2 medium onion
2 small yukon gold potatoes
1 large carrot
2 1/2 cups low sodium chicken broth or water
.
Directions
1. Cut chicken, onions, potatoes, and carrots into bite size.
2. Saute in a saucepan until lightly browned.
3. Add 2 cups of chicken broth or water and bring to full boil
4. Remove from heat. Break curry sauce mix into pieces and add to the saucepan.
5. Cook over low heat until curry thicken, 15 minutes.
6. Serve over rice!

1/4 onion
1 green onion
2 cups rice water, 쌀뜨물
sauce:
3 teaspoons gochugaru
3 teaspoons soy sauce
3 teaspoons mirin
1 1/2 teaspoon sugar
1 teaspoon garlic
1/2 teaspoon ginger
1/2 teaspoon pepper

kimchi jun

김치전 - 비오는날의 별미. 비가 오려나? 아이고 허리야..

serves 1

Ingredients
1/2 cup chopped kimchi
1/2 cup korean pancake mix
1/3 cup water
2 tablespoons oil

Directions
1. Mix kimchi, pancake mix, and water in a bowl.
2. Heat 1 tablespoon of oil in a small nonstick pan. Place 1/2 of the batter in the pan to form a pancake.
3. Fry until both sides are golden.
4. Serve with chopped red/green peppers or thinly sliced green onions...and a glass of ice cold beer.
