spicy small octopus - 낙지볶음
1/2 onion (sliced), 2 green onions (sliced), 1 jalepeno (sliced)
1 carrot (sliced thinly), 1 zucchini (sliced thinly)
1 lb of small octopus - wash/rince with 1 tablespoon of salt. Cook for 15 seconds in boiling water; drain.
Sauce: 2 tbs of gochujang, 1 tbs gochugaru, 1 tbs soy sauce, 2 tsp minced garlic, 1 tsp ginger, 1 tbs mirin,
1/2 tbs sugar, 1 tbs corn syrup, salt & pepper
Combine cooked octopus with sauce.

Heat 1 tbs of oil. Add onions, carrots, and zucchini and cook for 3 minutes over high heat. Add the marinated octopus and stir-fry over high heat for 2 minutes.

rocky road brownies
Lynden made these heavenly treats as one of my xmas presents. I had it for breakfast, lunch, and dinner.
Made 2 mini squares for Kaitlyn. :-)
Martha Stewart's Recipe
makes 16
1/2 cup (1 stick) unsalted butter, cut into pieces, plus more for pan
1 bag (12 ounces) semisweet chocolate chips
1/2 cup granulated sugar
1/2 cup packed light-brown sugar
1/2 teaspoon salt
2 large eggs
3/4 cup all-purpose flour (spooned and leveled)
1 cup miniature marshmallows
1/2 cup chopped nuts, such as cashews, pecans, or walnuts - I used pecans, walnuts, and honey roasted peanuts.
1.Preheat oven to 350 degrees. Butter an 8-inch-square baking pan. Line bottom with parchment paper, leaving an overhang on two sides; butter paper.
2.In a heatproof bowl set over (not in) a saucepan of simmering water, combine butter and 1 cup chocolate chips. Heat, stirring occasionally, just until melted, 3 to 5 minutes.
3.Remove mixture from heat; stir in sugars and salt, then eggs, and finally flour, stirring just until combined. Spread batter evenly in prepared pan. Bake until a toothpick inserted in center comes out with moist crumbs attached, 30 to 35 minutes.
4.Remove from oven, and sprinkle with remaining chocolate chips, then marshmallows and nuts. Bake until chocolate is shiny and marshmallows are puffed, about 5 minutes. Cool completely in pan. Using paper overhang, lift cake onto a work surface; cut into 16 squares.

christmas dinner - short rib ragu with pappardelle
Serve it with freshly grated horseradish - totally enhances the flavor of the meat. Totally.

shrimp curry rice
.
Ingredients
1/2 box House Vermont Curry Sauce mix (3 curry blocks)
1 1/2 lbs large shrimp (about 16)
1/2 medium onion
2 small
1 large carrot
2 1/2 cups veggie stock
.
Directions
1. Cut onions, potatoes, and carrots into bite size.
2. Saute in a saucepan until lightly browned.
3. Add veggie stock and bring to full boil
4. Remove from heat. Break curry sauce mix into pieces and add to the saucepan.
5. Cook over low heat until curry thicken, 13 minutes.
6. Add 1 1/2 lbs of large shrimp. Cook for 2 minutes.
6. Serve over rice!
